I'm about to purchace a new system (I'm considering a Falcon-NW PIII
866+ system, anyone else have a Falcon system out there?)

And am torn between the 3dfx Voodoo 5 5500 65 meg AGP card, and the new
GeForce 2 64 meg AGP card.

The GeForce seems to have much better frame rates, but obviously won't
support glide games and I still have several games that either run
better under glide or only support glide.

My question is, since this new system is going to be designed to run
racing games like GPL, RC2000, F12000, N3, Toca2, the upcoming GP3,
Rally Masters, CMR, SCGT, NFS HS, ReVolt, etc, etc...

Which card is better suited ?!?

I'm leaning towards the V5 5500 due to it's glide support, but can any
GPL players out there tell me if they've fixed the OpenGL, incar full
mirror issues with the TNT/Ge Force based cards?

It's only fixed with a couple of hacks. Must use 3.68 nvOpenGL, set
Flipping Mode to Block Transfer and then in Core.ini use "MirrorsEvery
= 2". This fixes it, but you lose FSAA with the older nvOpengl so if
you really want FSAA in GPL then you had better get a V5. FSAA causes
screwed up menus in quite a few games with FSAA enabled, including
SCGT and F1 2000. Hopefull a driver update will come out that fixes
this problem. So if you want glide and FSAA then a V5 is the way to
go. For me FSAA is not that big of a deal and speed was important so
chose an Annihilator2. BTW, a 64mb ProphetII is no faster than an
Annihilator2. It only becomes better at higher res's like 1600x1200
and /or with FSAA enabled at higher res. More memory just means higher
res capable, but not faster as you probably know. ProphetII was
overclocked in the bios so that's why it looked good in benchmarks,
but now lots of people have had problems with it so they have had to
release a bios update that clocks it back to default.
