I have a T2 set up for my driving sims.  Should I choose Linear or
Non-Linear steering under options in Nascar and IindycarII???  Seems
to drive better on Linear.

Non-linear is better for joysticks, makes it easier to make small course
corrections. Linear is usually better for wheels, it feels more natural,
and the additional movement you get in the wheel still gives you the fine
control you need.

Well, you answered your own question. Since the game feels better for you
with linear steering, you should use that.
Normally with steering wheel you should use linear steering, since that
is what you get on real car. Non-linear is mostly intended for joystick
drivers (like me) to help making fine adjustments to driving line.
Non-linear makes the steering less sensitive near the center, and the
applied steering increases exponentially when the device is turned.
