Short stages, good physics: Rally Trophy
and most people seem to like Rally Masters allthough I never liked
that one.

Rally Masters, I think, especially if you have a lower-spec machine.
Some people dislike the "grainy" look to the graphics, but I think it
fits rallying perfectly, more so than the brighter arcadey look
favoured by Colin McRae and Rally Trophy.

Well, depends on what's your cup of tea... I think most people
here would agree about the following:
Rally Championship (i.e. Mobil 1 Rally Championship)
has good stages, very authentic, but the driving physics are horrendous.
The cars don't seem to turn by the wheels, the grass is "sticky"... But
the
terrain is great...
Rally Masters (i.e. Test Drive: Rally Masters)
has completely fictional stages, but the "feel" of rallying sure
shows...
Sliding a car around a corner can almost be FELT, and the super-special
stages adds some truly hair-raising moments as you go one-on-one with
another driver. Not quite enough stages though.
Colin McRae Rally 2
has fictional stages, but more stages. It's like right between the two
titles
above in terms to authenticity and fun. Car physics are quite good.

You can mod a lot of parameters in RC200 to the point that it feels pretty
good. I've tried them all except RT and RC2000 is the one I like the most.
None of them are high fidelity sims though.
