I have a Force rs with a usb interface. Is it possible to use another set of
pedals such as CH Products Pro Pedals with a game port hook-up instead of
the stock pedals. It is really hard to feather the throttle in turns.

For what it worth...

I dumped the Act Labs alltogether because of the poor response curve of
the pedals and even the wheel. The wheel can be compensated for,
somewhat, with steering ratio and linearity. I use the MSFF wheel now.
With the Act labs I tended to get loose on entry because of the quick
steering rasponse. This was with the steering ratio set quite slow and
lineraity at about 95% (NR2002). IMO any wheel and/or pedals would be
better than the Act Labs in a precision driveing game.

I can't see why not.  As long as your game can see more than 1 device,
you should be set.  I have a MS wheel and use AL clutch pedals and
have no problems with games like GPL, F12001, NFS, Viper and many
more.

If the game will support two controllers you can do this. The another option is
to wire the new pedals into the ForceRS if you don't mind swapping the plugs
(and voiding warranties).  Try the forum at  http://www.slottweak.com/  ,
someone there probably can help with the pinouts and wiring.

How did you manage to get Viper to recognize more than one device?

Is there a patch somewhere?
