I have been looking at different wheels for a while now and am probably
going to buy the Logitech Wingman Force Feedback wheel.  It's the best
fit for my desk, I've had several recommendations, plus I have always
had good luck with Logitech products.  My questions relate to using it
without force feedback.  If I am playing an older game that does not
have force feedback support, will I still be able to set it up so that
it has a centering spring force?  Also if I am playing a game in which I
do not like the FF support, and decide to turn it off in the game, will
I still be able to use the Wingman profiler to set up a default
centering spring force?

Yes and ditto. A variable amount of centering spring can be set in it's
control panel (or via the Profiler, should you so wish), irrespective of
using FF or not.

Very little need for this option once you get used to (good) FF games,
though.
