Why is Anti Aliasing greyed out in GPL's options screen?

Not quite correct.  It is greyed out because Papyrus choose
not to support it for 3dfx.  It isn't automatic as you suggest
though (don't confuse AA lines, triangles, and polygons
with mipmap blending and bilinear filtering of textures).

I thought older Voodoo-cards didn't even support anti-aliasing? What
about V3?

The grAA* functions have always been in the Glide2x API, I think
you are refering to the full screen AA process which is a nearly
completely different and expensive solution to the problem than
the one offered by 3dfx and Rendition.
