First, are there any benefits to the Pro Pedals versus the regular CH
Pedals?

Second, looking at the pictures on the CH website, it would appear that the
pedals, since they look more like flight sim pedals, are made to have your
feet on them at all times.  This would seem to imply that left-foot braking
is preferred with the CH Pedals, but that could easily be an incorrect
assumption on my part.  Any info appreciated.

no. use the non-pro-version and wire them to your LWFF.
btw: you should modify the brake-pedal for more pressure.
