I downloaded some hotlaps that were supposed to be done using the keyboard
Whilst these guys can certainly fly round the tracks i don't understand how!!!

Question is how do you accelerate SMOOTHLY on a switched device , i can
understand doing this on an analogue system, but it bugs me how they do it
on the keyboard.

For example on one of the corners they do 70 mph keeping damn close to 70
the best i can do is to just keep 'tapping' the key but it is no way near the
same.

Are these hot laps for real

Maybe the hotlaps you are referring to were made with the keyboard for
steering only, and joystick was used for accel/brakes.
