I think the biggest difference is that you can make a much smoother
transition from braking to accelerating - if you have combined axis,
then as soon as you start braking you're effectively fully off the
throttle, and vice-versa.
I also find that it's possible to halt very bad spins (assuming it's too
late to get out with throttle and opposite lock) by slamming on the
brakes - the car then stops rotating and slides a bit, and you can
recover.
With combined axis I think this won't work, as when you stick the brakes
on it also dumps the throttle, which makes the spin worse.
I seem to get a better "feel" with split axis, but that could also be
because you also get effectively double the controller resolution (each
axis goes from 0 to 100% rather than 50% to 100%, if you see what I
mean).
