In the server name field,  it puts the driver's first initial and last
name.  I plan on running a dedicated host for a race league and I'd
like the name of the league in that field instead.  I've seen other
servers like this,  but I don't know how they did it.  How is this
done?

uhh, I don't know. ask in the vroc chat and you'll find out quick for
sure.

I think it uses the current player name you have selected in GPL.

I figured that out.  I didn't know you could leave the first name
blank.  Sometimes the simple solutions are the hardest to find.
