It's not possible.
Papyrus wanted to recreate what you would see in the driver's eye if you
were in the real-life car. And they didn't had digital displays ;)

It is a sim. They didn't and you don't ;) You go by the tach. The
other gauges are explained at Jeffrey Hunsbarger's web site:

When I want to know the speeds I'm turning, I look at the replays.
Speed is displayed there.
