Cancel the intro with the X button on controller two.
In arcade mode, choosing the Ace car 11 times in a row and then
choosing the rookie car, then exiting and returning to the track will
allow access to the car setup screens in arcade mode. (allowing you to
tweak the car more to your liking as you get faster and better at a
track.)
Other than that, no codes. (It's still a racing sim after all... :-) )
