I know there are GP 1,2 and 3 cars, but is there still going to be a
pacecar of some description to go round and learn the tracks with?

If this is answered in the demo, I'm sorry for wasting your time, otherwise
someone must know

I'm not sure if there will be a pace car to learn the tracks with but
the GP3 car (140 H.P.) is slow enough to easily learn the tracks without
worrying about looping. I also recommend that you use the All American
Racers Eagle chassis first as it is the most stable and forgiving
chassis of the three in the demo. The BRM is next and the Lotus is the
most knife edged chassis.
To help you make those first laps I have written a Track Guide for the
GP3 car at Watkins Glen. The guide contains suggested gears, braking
points, and racing lines. I will be writing a guide for the GP2 and GP
cars in the next day or so. There is also a replay with a lap in a GP
Lotus and a replay with a lap in the GP3 Lotus so you can compare it to
your own efforts.

The best way to learn the tracks is to just drive around them.  I'm not sure if
there was a pace car of any type back in '67... I wasnt even born till a decade
later.

if the sim is accurate there is no pace car in GP racing all starts are
standing starts from the grid and yellow flags are usually yellow only in
the local area of an incident.

by the way any ideas as to if it should use European white flag (emergency
vehicle on track) or American (last lap)

American road racing uses white flag for slow vehicle (typically not a
racecar, but it doesn't specifically imply an emergency vehicle).
