I'm having LOTS of trouble driving the demo (did just fine with GP2), but I
attribute it to having to use the digital buttons for gas and brake and not
being able to adjust the steering wheel lock of the car.  Does the handling
improve a lot with setup?

Yes. The main difference with the full game is that you can turn off all the
drivers aids (anti-lock brakes, traction control, anti-spin, etc.) and really
get down to driving.
