When I race in multiplayer, the car I drive shows up as a different
one on the host machine. I made a Keystone Light car on my machine
but when I hook up via modem I am driving the #50 Sierra car and my
opponent is driving my Keystone Light car. Any suggestions?

When you are the CALLER, you will always show up in the second car.
NASCAR 1 worked this way as well.  To make you appear when you are the
caller, place HIS car first, then yours in the second slot.
