From what I've seen, the latency settings for FF wheels are roughly 1/4
second.  That adds up to a lot of feet at 150mph.  I'm considering buying a
ff wheel but not if I'm feeling the road 15 feet behind my trusty Cooper.
Also, how do you pronounce Osterreichring?  And finally, are the physics in
Rally Champ 2K better than in the Demo and can you adjust the dead zone in
the full version?

That's why there is a latency setting. You can set the time the program
calculates ahead so you feel that bump at the right moment, compensating for
the latency in your system and wheel. Have a look at Alison's pages. They
explain it better than I could.

You are able to 'tweak' FF settings to suit you.  And when they are set,
they do seem pretty good...

Whether they are faster or slower, is a personal preference.
