 Goto the "Configure" button bottom right main menu, then "Controls",
then press the little circle icon down bottom on the menu.

 Set "Acceleration" to (perhaps) 100%. 0% causes instant throttle.

 I'm testing 100%-throttle, about 80%-brake, and about 60% steering
sensitivities. Seems pretty good, but throttle is still quite
sensitive (but workable).

Don't know about the demo, but the release product supports analogue
brakes and throttle.

Listen up, this is a 200MPH driving sim, not Geoff Hamiltons garden
designer. Just who gives a toss if the trees are cardboard cutouts?

I like it. Had a lot of trouble with it, bit it seems to repay a little
time and troube.
