Okay, I'm still running the demo (only for one more week!) and I keep having
an issue with engine overheating. A little red radiator icon appears on the
right and I've had my engine blow after less than 10 laps. My question is:
how do I keep the engine from getting so hot? What is the setting in the
garage to adjust that?

Radiator size ( increase it ) and RPM limit ( decrease it )

You need to use a bigger radiator.  Or alternately if you have turned
the redline up from the default settting that could be causing it too.
Try turning it back down if that applies.
