Is it supposed to be faster if you drive with the throttle and anti-locking
aids off? This is the more realistic way of driving, but I'm struggling to
match my times with the aids on and I was wondering if the potential is
really there.

You have to turn off the aids to go fast!  It's that simple.  :)
