I'm thinking about grabbing a set of CH Pro Pedals for flightsimming and was
wondering if theres any showstopping problems with using these for racing
pedals?

You shouldn't have any problem with the PRO model I think, unless the game
has a bad calibration system (some of them old sims don't know how to
recognise a second joystick).  About all modern racing sims support multiple
joysticks since the CH pedals are set as joystick2 X and Y axis.

Just remember to put the stops so they don't act like rudder pedals when you
drive ;-)
