Is there any way to get "anti-lock" brakes in GPL without resorting to
brake help.  I find it so difficult to prevent the wheels from locking
up.  And many times I end up in the ditch at the outer loop :)

The skid sound is the thing to focus on, when you hear it back off a
bit. A useful thing is to make it louder so it's easier to hear at high
revs. Also, put something under your brake pedal to give it some
resistance and feel. I use foam ***, a squash ball is popular.
And as you've heard many times, or will, practice helps a bunch.

Don't push the peddle to the floor!!  Treat a GPL car in the same
manner you treat your real car

How do you make the skid sound louder?

I downloaded the Tom Pabst SoundPak
http://www.simracingnews.com/soundsgarage and found that the louder tyre
sound in that helped me a great deal. I'm pretty sure there's no way of
doing from within the program. The squash ball (or in my case, a stiff coil
spring I had lying around) is ESSENTIAL.  It lets me brake much more
consistently as it changes foot position controlling the amount of brake to
foot pressure controlling it.
