I agree.  There is no solution.  It's like making  a 'swimming simulator.'

Perhaps something like a freestyle gamepad on top of a floor mounted "post",
but with longer handlebars and a twist grip throttle would approximate what
we are looking for. Shouldn't be too difficult to "cobble-up" a prototype
and see what it's like :-)

Front-read brakes could also be simulated, possibly through dual-axis
pedals. Not a "realistic" control, but it would get the job done.
