Is it possible to assign one of the two anolog paddles ( brake or
accelerator ) to clutch even if you have your pedals connected? If not, is
it possible to re-wire those paddles to another pins so it would be possible
to use the pedals and a clutch at the same time?

No, but you can assign the shift paddles to clutch.
