I found the same thing - for me the best track for moving onto once
you've reached a plateau is the Nurburgring, as it has so many corners
that it really makes you live off your wits while you're learning the
circuit.
Whereas at other circuits you just learn to brake at certain points and
try to repeat the same actions lap after lap, the Ring is so big that
you have to actually learn how the car behaves in a whole lot of
different circumstances, and try to predict what it will do before it's
too late! All of which is very useful when you go back to the shorter
circuits.
The other thing you could do is to look at replays of other people's
hotlaps and download their setups! ;-)
