Why is it that my best lap time are from laps where I've spun out badly???

GPL shows you the time of the lap before the one you have just finished ...

to see your last laptime, watch the replay after crossing the line ...

In GPL you see the laptime of your previous lap, not the one you just
completed. You can use the replay mode (F2) to see your latest
laptime, though.
