Rather than try to tell you what the are, I'll try to tell
you what I think they do.
For starters, if you are having trouble staying on the
track, the absolute easiest setting is 85/30 with
the number of clutches set to 1. That setting will
minimize wheel spin coming out of a turn, and minimize
rear wheel lockup while braking. For extra stability
while braking, increase front brake bias above 60%.
The first number in the ramp angle setting controls
the rear wheels when on the gas, the second number
controls when coasting.
The effect of an 85/30 ramp angle setting has is to
allow the rear wheels to spin independently when getting
on the throttle, and keep the rear wheels locked from
spinning independently while braking. Higher numbers
equal more independent spinning, while lower number
keep the wheels locked together more, and more
clutches makes the wheels lock more.
Those settings should make it easier to stay on
the track. As you learn the tracks, you may want
to start adding clutches. One some tracks I've
started raising the coast angle to help slide the
rear end around turns.
