The NHRA series from... I forgot.
Canopy has Midnight Outlaw series and Hot Rod, but they're
  not THAT realistic.

Look for "NHRA Drag Racing Main Event" by Moto1 and published by
www.valusoft.com

Graphics and sound not bad but not great either.  This is a sim though
and not an arcade game. Has a great telemetry module too. The readme
says it is the same telemetry software actually used by NHRA teams.

as pointed out before the NHRA main event is the best choice for Top Fuel
and Pro Stock action.  If you are after more of a sportsman racing title
(aka bracket racing) then the Bethsoft title IHRA drag racing would be a
better choice. Its bascily the follow up to the old Burnout PCE.
