I am wondering if you guys get a different grip level between day and night
time races from the same track in NASCAR2

Well, let's rewrite what I said...

If you use random temperatures, there can be a difference between any races
at each track (Nascar2 models the temperature with the day the race is in
the N2calendar).  So tracks in the start or end of the season have in
average lower temperatures if you choose random (it also depends on the
location of the track AFAIK).  But if you use constant temperatures, there
is no difference in the night/day tracks of Bristol, C***te or Richmond.

There are differences between night and day racing.. The track changes..
