Ok, I'll bite.

Grand Prix Legends is THE definitive driving simulation. It models the 1967
Formula 1 season and the physics are ***ively and excrutiatingly
realistic. It is currently the "best Car Driving simulator".

driving simulator -  a racing game Nascar 2000 or Porsche Unleashed. What do
you think?

Grand Prix Legends (known as "GPL" around here) features the most
complete physics modeling, but it only simulates 1967-vintage Grand
Prix cars, which may not always equate to real-world driving.  This
does represent the most realistic auto simulator available for the PC
at this point in time, but it might not necessarily be what you're
looking for, based on your question.

NFS:PU is right up there with GPL, in my opinion, so that would be
something to look at, and there are several others worth mentioning.
For example, Dirt Track Racing ("DTR") does a good job of simulating
Late Model dirt track cars in an oval racing environment.  Viper Racing
features a very good physics model, simulating the Dodge Viper.  F1
2000 is probably the best modern Formula 1 simulator available to
date.  I can't say much about the current crop of rally sims due to a
lack of hands-on experience, but there are some good driving sims in
that group as well, from what I've heard.

My recommendation regarding the best basic general DRIVING simulator
today would probably be Need For Speed: Porsche Unleashed -- it
simulates real-world handling characteristics much better than N2000,
and I would put it in the same league as GPL, DTR, F1 2000, and Viper
Racing overall.

I would underline those comments about NFS : Porsche Unleashed
(or "porsche 2000" as its known here in the uk).

I'd become disillusioned with the NFS series and swore I wouldn't
buy one after NFS3 - but the Porsche 2000 program is excellent. I
was racing around Monaco after dark in a 550 Spyder last night,
it was amazing, I found that the slimmer profile tyres made
oversteer much easier to provoke than the 911 S I had been
driving. (Or maybe it was just the extra power ;-)   )

Also - a major plus this - the requirement specification on the box
for a "recommended PC" appears to be realistic. For many games,
the "recommended" is really the "minimum", but thats not the case here.

But don't you think the factory driver mode is rather cheesy?

Game : "Hey Jan, bet you can't drive this slalom course I set out on the
skidpad!"

Me : Sure I can dipstick, with one hand tied behind my back, as a matter of
fact.

-Sheesh, Even worse than those taunts in "Stunts". Good effort on the whole
though. A little on the easy side, IMO, but not bad at all. Looks amazing
and runs well.
