Does anyone know what these do? I switch them on and off and can't see any
difference!

Specular Highlighting makes the rounded portions of the car shiny/glossy
(this adds to the 3D effect).  You should be able to see the difference.  If
not, there's something wrong with your video card.

Environment Mapping is a method of displaying light, specular reflections,
and shading, which is more "physically correct".  It tends to smooth out
artifacting with plain old specular highlighting as well.  EM is memory
intensive, so I'd avoid it... especially if you cant see the difference.
