Why can't I get SCGT to recgnize my paddle shifters?

Because it doesnt see them. It only recognizes four buttons. You
need to map the paddles to keyboard letters using the Sidewinder
Profile editor. When you set the controls in the game, use the
keyboard letters you programmed into the wheel software as you
keyboard input and use some other buttons (Like 1 and 2) for the
controllers shifter input.
During the game, when you use the paddles, the game sees it as
keyboard input and shifts the gears. Dont pay any attention to the
buttons you assigned to the shifts. The game reads keyboard and
controller input at the same time, I think that's what confuses
people.

It does, buttons 1,2,3 and 4
bzzzt! too complicated (and incomprehensible, to boot.). put 'q' for
the left paddle (button 7) and 'z' for the right paddle (button 8)
Save the profile as SCGT.
Go to the profile activator and select the SCGT profile. Close the
activator.
Right. When it asks for keyboard input for shift up, press 'z'. When
it asks for controller input, press one of the buttons 1-4. When it
asks for keyboard input for downshift, pess 'q' When it asks for
controller input, press another of the buttons 1-4.
You don't have to use the chosen controller inputs in the game..use
the paddles.
Thats it.
