Rally games offer what you are looking for.  Rally Trophy and Rallisport
Challenge come to mind.

Other good "countryside/wilderness" addon tracks include
Solitude, Sachsenring, Isle of Man, and Corsica rally
stage (when is that going to be converted to a circuit?).

Monster Truck madness, which the 'coders' went on to make it independently
as 4x4 Evolution.

World racing, the recent demo, I have found that I can drive for hours
anywhere in the virtual area (pretty big)  off-road on road, 4 cars to play
with (after you win a race)  dunno about physics engine (GPL, NR2002,
NetKar, are my favorite Simulators) but it seems adequate just for fun.

All that I can say Rick, if  you haven't tried anything but NFS, your way
too easy to please, IMHO.  NFS, et all, are console games only, don't care
what computer you put it on, runs best with 9year old at the controls, and
the controls need not be anything but joy-game pads  LOL!

I liked Monster Truck Madness.  I really wish the series would have
continued on...

I guess Microsoft didn't make enough money off of it to go beyond '2'.
