Are there any differences in the various cars performance? I heard
someone say there was but I couldn't tell the diff between a Simtek and a
Williams. Is there any official patch out yet to fix some of the annoying
quirks like Coulthard beating Hill all the time? The car performances
should be unique so that the races aren't so monotonous.

There are indeed differences in the various cars performance and especially
differences in the various drivers personality. At least from what I have
seen.
The only downfall so far is that no matter what team you drive for, your car
always gets the performance specs of the Williams. No possibility
of trying to do what Michael Schumacher has done this year and take one of the
inferior teams to the podium, since you are always blessed with the Williams
performance specs.
Personally I changed the name Coulthard to Senna, in which case his
outperforming D. Hill makes a lot more sense.
If you ask me the game's Coulthard drives to well compared to the real one,
really he should hit a few pit walls or spin out on the parade laps ;-)
