Is anybody out there running without steering help and using a joystick??
I don't have a wheel and can't seem to control the car at all without the
steering help on.

To be honest, I believe you might be one of the first 10 person to
think steering help actually helps. Most of the folks in the office at
Papyrus use joysticks, and in order to progress and get good at the
sim, I firmly believe you need to turn OFF steering help ASAP, and
turn off braking help as soon as you learn approximately how fast to
drive in the corners.

The only thing I can think of that would be causing an inability to
control with the joystick are:
1) Bad (or digital) joystick. Do you get smooth movement all the way
through the range (in the calibration screen)?
2) Bad calibration of joystick. Is the arrow centered when the
joystick is?
3) Game port drift. (Over time, as the game port heats up, sometimes
the values change somewhat.)
4) Using the Rendition DMA version on a non-Intel "Pentium" chip. No
real solution here at this time.

Oh, you can probably ignore my post then, as he likely (from saying
that he "liked" steering help) didn't have NASCAR 2. Sorry for the
tunnel vision.

First, what kind of stick?  You got to have a good one... MS Sidewinder
worked well for me.  Also, normally with a stick you need to reduce the
wheel lock to the minimum you can get by with for each track.
