Has anybody out there defeated the AI on every course?
How about on "Pro/Long?" The reason I ask is so I can
be jealous :)

Why don't you use the "Tweak AI"-Tool ??

I've done it at Kyalami, Mexico, Monza, Silverstone, Spa and Watkins on
Intermediate, Silverstone, Watkins and Monza on Pro and Monza on Grand
Prix.
