Does anyone know if Papyrus has made up additional tracks for the NASCAR
Sim Ver. 1.1?  I'm looking for more of the roadrace type idea (like
Watkin's Glen).

Papyrus has come out with a Track Pack that includes seven new tracks.
They include:

Superspeedways:
C***te Motor Speedway
Pocono Speedway

Short Ovals:
Dover Downs International Speedway
Richmond International Speedwway

Tri-Oval:
North Carolina Motor Speedway (Rockingham)

Road Courses:
Sears Point Raceway
