Can anyone tell me which cars use the F1-style push buttons on the steering
wheel for gear shifting vs. which ones use a traditional gear shift and
clutch?

  Hmm that's a toughie since any current system is liable to change.  I know
CART CHAMP cars use a stick.  Most Touring cars, Stick.  F1 uses paddles.  GTR
cars?? mostly stick I think.  Irl?? probably stick.  Can Am/WCS...stick.
Winston Cup etc STick.  I'm not sure about the smaller classes like F3000 and
below.

I know CART championship cars use the gear shift lever and clutch for "power
shifting."  I think F1 cars use the push buttons on the steering wheel.

F1 = buttons
CART = Sequential shifter and clutch
Indy Lights = Sequential shifter and clutch

Sequential shift = push forward to go down one gear, pull back to go
up one gear, like a motorcycle gearbox

Cart uses clutches only to leave the pits and then they don't use them
at all- they push the gearshift lever backwards to upshift and push it
forwards to downshift.  It resists slightly during each
upshift/downshift to signify entering another gear.  For example, when a
driver wants to go from 1st to 3rd, he pushes the lever back twice.  To
downshift from 3rd to 1st he pushes the lever forward twice.  It's
called a sequential gearbox.  Hope I explained it well enough.

Lower level series use clutches and old-style shift patterns.

F1 cars use "paddles", not "buttons".
The paddles are located behind the steering wheel rim and the driver does not
have to move his hands from the wheel, as the paddles are part of the wheel
assembly and rotate with the wheel.

I'm not sure, but I  CART does use the clutch to shift.  I think I can recall
when Jimmy Vasser had a gearbox problem and said he had to lift off the gas
when he shifted.  I'm not sure though.

Well, I said I THINK.  I know that they use paddles now.  I remember playing a
F-1 arcade game with the paddles behind the steering wheel.

They only use a clutch to shift from neutral to first, after that they don't even
have to lift, as the ecm cuts off the ignition just enough to slow the engine
down.  Unless of course there is a problem with the car.  Christian Fittapaldi
had this problem at Elkhart in '97
