I know there is a shifter with the T1, but can it be bypassed if your running
manual shift?  Also, if you do use it, does it have a reverse?

You can manual shift or auto shift.  If you auto shift, it ignores
the shift lever.
You can control reverse many ways, I use a button on the dash
near the wheel for reverse.  You might be able to use the shifter
for it, but I would be afraid of bumping it.

I was wondering how people program their T1 - I can't seem to figure out
how to program the buttons on the dash.  ie) program the wheel, gas & Brake,
and the shifter, but no options left to program the buttons !

how about roll bars, can they be set to be adjusted through the dash buttons?
any help or suggestions appreciated.. probably doing something stupid :(
