It's unlikely that this could be done, because (at least from my
experience in Indycar Racing I) the saved data is vector data, not
bitmaps. This means that saved data just records the position on the
track and direction of travel and speed, and then the game recreates
the cars based on this indirect data.
If they had to create an AVI converter for it, you'd pretty much have
an entire product on its own. The converter would have to be able to
create the cars by itself. Plus, I can only imagine how big an AVI
replay file would get, probably wouldn't fit onto your disk, no matter
how many gigabytes you have.
