The two I would recommend are:
IndyCar Racing (ICR) by Papyrus - very realistic, hard(ish) to learn,
needs a good joystick or even a(n expensive) wheel to play properly.
Only comes with 8 tracks; you have to shell out for the other 8, and
for a paintkit. Great graphics, but some horsepower required; a
486SX/25 is okay, a DX2/66 is nicer, a P90 nicer still (all that
texture mapping!).
Formula One Grand Prix (called World Circuit in North America)
(F1GP/WC) by MicroProse; not quite as realistic, but easier to get
into. Almsot no texture mapping, but very fast, even on relatively
low-powered machines (a 386DX/33 is plenty). Comes with all 16 tracks
from the 1991 F1 season. There's no official paintkit, but there are
two free ones on the net and a whole host of useful extras (like a lap
performance analyser nearly as good as the ones in real F1 cars!).
WC is also available for the Amiga (I have that too!).
I prefer the latter, but then I'm biased (I run the F1GP/WC PC Hall Of
Fame). WC is now out on a budget label, and ICR is pretty cheap. Heck,
get both and play both!
F1GP/WC version 2 is in the works, and will hopefully be released this
summer (if not sooner).
