What is the easiest way to do this?  I have some software that can
create ISO images of DVDs that I can then mount with Daemon Tools.  Is
there similar for CD-ROM's?

Just about any program that burns CDs will also create ISOs. I use Nero

You will / may have some problems running software like this - some of
the copy protection systems will crank into gear and reject your ISO
of the disk as it is not the original disk.

I tried this to prevent having to put the CD in every time, but I gave
up when too many games had safedisc etc protection.

Plus, at 700mb per disk, I soon started to run out disk space.... :-(

I use Clone CD. Pretty good in most cases.
