1) Re-calibrate your controls, making sure that the
steering axis is perfectly centered.
3) Decrease your steering lock/ratio. I think this
is in the car setup menu.
2) Increase your speed sensitive steering. I forget
what GP2 calls this, but it's in the advanced
control options menu.
Imperfect calibration would explain the car pulling
to the left - try recalibrating first. Losing control
indicates too much steering sensitivity. I personally
prefer to keep speed sensitive steering to a minimum,
so I'd try reducing steering lock first.

Along with the other ideas that Pat suggests, I have found that "dirty"
steering pot can contribute to cross-talking between the gas/brake and
steering. You may also want to clean your steering pot.
