That isn't the main reason they do it - it's a way of moving brake/weight
balance while braking/cornering.

Then go drive it some more, but don't do it in GPL. Get the "rough and
ready" conversion for F12k2/F1C and have at it with the GTR2002 N-GT Ferrari
and Doug Arnao's Spa setup.
Not only will that get you near or under the 8-minute mark in no time
(always good for the ego), the grippier car will also allow you to play with
your line through the corner sequences. It also helps you get used to the
scenery zipping by at an alarming rate.
'cos That's what it's all about at the Ring. Driving a good line and using
all of the track. If you push yourself to the very limit this track will
bite you, so it's a matter of working with it to go as fast as you can at
98%.
Anyhow, trust me, you will begin to see "through" the sections better in
F1C. Along with some setup improvement (care to try some of my current
ones?), it helped me to knock another 6 seconds off my times in GPL.

I haven't loaded *any* mods for it yet. I had serious problems trying to load
a couple of JB's mods for another game, so I've been leery of mods ever since.

That's something I still have to work on, but I don't know how. Looking at the
replay, it's very obvious that I don't use all the track. But when I'm
driving, it seems like I'm already at the edge. I think it's a perception
problem, and I've noticed it in all the games I play. However, I don't have
that problem in real life - I can put my car *exactly* where I want it. It's
just something wrong in the games... :-(

It won't happen. You won't be braking with your left foot because you
will need it to work the clutch. Once that motion is burned in your
sub-conscious, it is hard to shake. It actually makes it harder to go
the other way, from a manual to an auto. I have (on more than one
occasion, sadly) completely locked all four wheels in an automatic
because I tried to disengage the non-existant clutch by stomping on
the brake pedal with my left foot.
Perhaps you need to get a bigger monitor, or sit closer to it. I noticed
I'm losing vision and perception if I don't get me nose close enough to
the old tube.
I'm not surprised you can put your car where you want it in real life
though. There, you tend to get excellent 3D (force! ;) feedback and,
most importantly, you've probably never driven your real car to the
very, very limit like we do in GPL et al. And *that's* when it starts
to get difficult.

I have problems in the games even at slow speed. I can't run the proper line
and use all the track even in an F3 car.
I *have* driven a Skip Barber car before, and was able to hit the marks fine
with that. That's probably as close to the limit as I get in GPL.
