Is there a way to turn auto-shifting off in the demo? Tried all the options
I could find (it recognizes my Logitech Wingman formla force and lets me set
the shift controllers) but it still auto-shifts. Maybe just a demo thing?

Yup, appears to be a demo thing.  Not adjustable as far as I'm aware.
