Doesn't seem to be an option in the game to remove it.

I like the helmet view but I think there are mods to remove it. Check out

Here's a copy that doesn't require you to join a forum.

All it does is make the helmet clear (invisible). You can still get
bug splats on the "screen", and you'll notice that the animated
shifts are delayed quite a bit, which may why Race07 didn't include
a "no helmet" open for the open***pit cars like the F3000, FBM,
and the Caterhams.
