The other track featured in the AMA Superbike game that
includes an oval portion is the New Hampshire International
Speedway (NHIS). They run on the oval for a bit and also do a wild
"Outside" the oval section.
An oval and infield course somewhat similar to Pike's Peak (PPIR) is
Las Vegas Motor Speedway. Unfortunately that course was dropped
from the schedule during the season this year, before the race.
(It actually was the first track model we completed, and still my
favorite oval for how it stresses the dual compound tire modeling,
so I miss it.)
Two AMA oval plus infield tracks we don't feature
(couldn't work out the licensing) are Daytona and Phoenix.

You can run the PPIR and NHIS ovals if you don't mind
dodging a few bales, camera stands and cones and don't mind the
corner workers waving those black flags at you for cutting the course! ;)
Maybe we should run an online race sometime using the oval, just for fun.
(Since we will be using some of the tracks for different types of series,
we have the capability to reconfigure the extra safety bales, etc.)
I recall NASCAR vehicles doing 180 mph slowing to 140 for the turns at
LVMS (Las Vegas) recently, so I doubt the bikes would be
full throttle all the time on the oval even there (and also
disregarding tire wear... ;)
