The reasons that people say "please avoid overtaking in lap 1" are:
At the start the warping is the worst.
Not all the drivers know eachother.
Your definition of running wide may not be the same as someone else.
For example, the driver in front of you could try to avoid a driver,
unvisible to you, due to available bandwidth. Don't forget, this
driver did a better qualifying lap then you, so you may expect (s)he
can handle his/her car better. Oh, you came in late and you're so much
better and didn't have time to qualify? Then why do you need to
overtake in turn 1? You got the whole race to prove you're so good,
use the rest of the corners instead of turn 1.
On VROC, not all the drivers are able to handle their car on cold
tires.
I guess you'll agree with me that first corner/lap accidents are not
fun, especially after 30 min of qualifying. If rules like no
overtaking during the first corner/lap can take care of this, I'm all
for it.
When you are driving with more experienced/known drivers, then you'll
see that it is possible to overtake during the first lap, but it isn't
common. The driver in front of you just doesn't allow it, and an
experienced driver wouldn't take the risk.
