I am going slightly mad trying to get around a couple of tracks: Loudon and
Phoenix. ANybody got a hint on setup/braking zones? They are both a pain!!

Seriously, at Loudon, I start braking gently before the skid marks. By
braking gently, you increase the down force on the front wheels and that
helps with the understeer going into the corners. I turn in under braking
until the car is down to about 110 MPH and then scrub off the rest in the
turn until I'm running 103-107 in the middle of the corner. I use max
spoiler to keep the rears from braking loose off the corner. I have no
trouble running 131's with a full tank using this technique.
At Phoenix, you have much the same problem going into T1. I brake a little
harder here and cut down low near the grass that separates the track from
pit lane. This will give you a good run off the corner. You have to let off
a bit in the kink, I try to catch the LF tire on the grass to whip the car
around for a fast lap, but if you miss, you'll have to brake hard or risk
hitting the wall. T3 requires the same technique as Loudon, kind of a
gentle brake while turning in. It's been a while since I've done anything
at Phoenix, but I recall running 132-133 with a full tank.
