Where can I download a copy of the NASCAR 2 demo for a MAC?
Is there a demo version of ICR for a MAC?

No N2 for the Mac, but you might look and see if there's a demo of
NASCAR-96 (Mac) on the Sierra site:

http://www.sierra.com/papyrus/

Also see if the Win95 demo has a Mac routine. :)
