Why are the 2001 times so much faster than the 2000 times?

2000 pole time:  1:30.556
2001 pole time:  1:26.892

None of the other tracks show such a difference, was it modified?

There were several races that the times really tumbled in and the reason is
tire development, better said as a "tire war". Look at the times for
Malaysia as well and a couple others.

there was an improovement in the Asphalt used on melbourne in 2001..

This same Asphlat was used at Bathurst too! and the times where so much
faster this year too!

if it not for the yellows would have been record race time!~!!!!!
